Spotlight: Delicious Traditional Pozole
Hello hello lovely people! I felt like dropping a recipe for you all to enjoy this chilly winter season, some traditional Pozole! Now, what is Pozole? I would describe it is spicy and extremely savory, it’s sure to satisfy and bring a warm feeling to you even on the coldest of nights. The ingredients are simple and the process of making the soup is fairly straightforward. I’m sure you and your loved ones will absolutely enjoy every last bite!
Pozole ingredient list:
5 lb chicken breast (shredded)
10 cups of water
10 cloves garlic (minced)
2 teaspoons salt
1 large white onion (diced)
6 dried gaujillo chiles
6 dried ancho chiles
2 25oz cans white hominy (drained and rinsed)
cilantro (a handful)
2 limes (squeezed)
black pepper and additional salt for taste
Toppings:
shredded cabbage
thinly sliced radishes
lime wedges
cilantro
white onion
Bring water to a simmer/boil, add the chicken and cook it thoroughly. Add half of the minced garlic, half of the diced white onion, and half of the salt. In the meantime, wash the hominy in a strainer under cold water. Once the chicken is cooked, remove it and shred it. Add it back to the pot once again with the washed hominy.
Remove seeds from the gaujillo and ancho chiles and rinse the peppers off before placing all of them into a blender. Place the remaining minced garlic, white onion, and half of the cilantro into the blender as well. Squeeze 1 lime into the blender. Take a cup of water from the boiling pot and place it into the blender. Blend on high until it becomes a paste/smooth texture.
Add this blended mix to the pot. Bring the temperature down to medium. Add the remaining cilantro, lime, and salt to the soup. Mix everything together, stir for a few minutes, then allow the soup to simmer.
